Rainy Day Recipes to Warm Your Soul

When the skies turn grey and the rain starts to pour, there’s one silver lining we can all agree on - comfort food season is officially back! So, grab your fluffiest socks, snuggle up, and let’s dive into some cosy recipes that are perfect for those blustery days. Bonus: they’re all made using your trusty Daewoo appliances! 

Carrot & Coriander Soup

Servings: 2 
Calories per serving: ~133 
Prep: 5 mins  | Cook: ~30 mins 

Ingredients:
1 small potato, peeled and chopped 
400g carrots, peeled and chopped 
1 small onion, chopped 
600ml vegetable stock 
1 handful fresh coriander 


Instructions:

  1. Pop everything except the coriander into your Daewoo Soup Maker. 
  2. Make sure you stay below the “MAX” line. 
  3. Select the “Smooth” setting and let the magic happen. 
  4. Once it’s done, toss in the coriander and blend again. 
  5. Serve with a sprinkle of black pepper (optional but delicious!). 

Top tip: Make extra and fill a flask for a warm, envy-inducing lunch at work. Trust us - your colleagues will smell it before they see it! 


Air Fryer Meatballs

Servings: 25 meatballs 
Calories per meatball: ~82 
Prep: 20 mins  | Cook : ~12 mins  

Ingredients:
4 pork sausages (skins removed)
500g beef mince 
½ medium onion, finely chopped 
50g parmesan, finely grated 
50g fresh breadcrumbs 
Handful of parsley, chopped
1 egg, beaten 


Instructions:

  1. Mix everything in a bowl and season with salt and pepper. 
  2. Roll into 25 bite-sized balls and chill for 20 minutes. 
  3. Preheat your Daewoo air fryer to 180°C. 
  4. Cook the meatballs for 10–12 minutes until golden and cooked through. 
  5. Serve with pasta and tomato sauce - or get creative! 

        Top tip: Have you tried a meatball wrap the next day. It’s messy, indulgent, and totally worth it.  


        Slow Cooker Pumpkin & Beef Stew

        Servings: 4 
        Calories per serving: ~600 
        Prep: 20 mins  | Cook : 8 hours (low) / 4 hours (high) 

        Ingredients:
        1 tbsp olive oil 
        2 garlic cloves, chopped 
        1 large onion, chopped 
        900g cubed beef 
        1 tbsp tomato purée 
        500ml beef stock 
        1 tsp dried oregano 
        1 sprig fresh thyme 
        200ml red wine 
        1 bay leaf 
        900g cubed pumpkin or butternut squash 


        Instructions:

        1. Sauté the onions in olive oil until soft, then add garlic for a minute.
        2. Brown the beef with a pinch of salt, then stir in the tomato purée. 
        3. Transfer everything to your Daewoo slow cooker. 
        4. Add the rest of the ingredients and cook low and slow. 
        5. Serve with warm bread rolls and a big smile.
